Choclo is the native word for "tender corn" which is less sweet and starchier than regular corn. Choclo is mixed with a pre-cooked cornmeal for arepa making. Once the patties are brown on both sides, choclo arepas are stuffed with fresh cheese and griddled again till the cheese is melted to make the ultimately sweet, salty and cheesy snack which goes well with a cup of Colombian coffee, hot chocolate or a herbal tea.
